Vendakka Kichadi

  Kichadi is a yogurt based Kerala dish. For making this any choice of vegetable is used which is sauteed first and mixed in thick, plain yogurt. It makes an excellent side dish. Kids love it because of its mild taste. It is a popular sadya dish. Here I've made kichadi with Okra (Ladies finger / Vendakka). You can also choose vegetables like tindora, bitter gourd, winter melon etc. Fruits can also be used to make this dish for those who like to have a sweet side dish.





INGREDIENTS
Okra - 600gm
Yogurt - 1 1/2 cup
Green chilli - 3-4 , slit lengthwise
Mustard seeds -1 tsp
Red chilli - 2
Curry leaves - 1 twig
Oil - 2 Tbsp
Salt - As required

METHOD
                         In a small bowl beat the yogurt well and mix with salt. Keep aside. Cut the okra into small circle shapes. In a pan heat oil and splutter mustard seeds, red chilli & curry leaves. Keep the heat source in a medium level. put the slit green chillies. Now add the okra and saute them well. Sprinkle little bit of salt onto it. Saute till the whole okra is browned and almost crispy. This will take some time. Remember to keep the flame medium or it will get burned. Once done transfer it into the beaten yogurt and mix well. Adjust the salt according to taste.
