Pacha Chemmeen Curry (Shrimp in thick coconut paste)

   Kerala, being a coastal state has a higher rate of seafood consumption. Seafood takes an indispensable part in their everyday diet. Mostly there are made as coconut based curries. In this special dish the shrimp is simmered in a spicy and tangy paste of coconut which is non-roasted (mostly while preparing shrimp coconut is roasted along with the spices and then grinded into a smooth paste) I got this recipe from the mother-in-law of one of my friends, that too many years back. I tried to recreate those ingredients from my memory and made this recipe possible (I'm still not sure if this is the exact procedure) Anyway it was a success and I would like to share this wonderful recipe with you.


INGREDIENTS
Cocktail Shrimp         - 12 Oz (you can use large shrimps also if you want)
Shredded coconut      - 1 cup
Coconut oil                -  3 Tbsp + 1 Tbsp (You can use vegetable oil or canola oil or any oil of your choice.      But coconut oil gives authentic Kerala taste to the dish )
Coconut milk              - 1/2 cup
Green Chillies             - 3-4, slit lengthwise
Red Shallots               -  1 1/2 Cup, thinly sliced + 4, thinly sliced
Chilli powder              - 1 1/2 tsp
Coriander powder      - 1/2 Tbsp
Fennel seed powder   - 1/2 tsp
Turmeric powder        - 1/4 tsp
Tamarind                    - size of a small lime
Mustard seeds            - 1 tsp
Curry leaves               - 2 twigs
Dried Red chillies       - 2

METHOD
              Clean, de-vein and wash the shrimp. Allow the excess water to drain away. Rub some salt and turmeric powder onto the shrimp and set aside.
               Soak the tamarind in 1/2 cup water and microwave for 1 minute. Allow it to cool and then squeeze the pulp out of it. Set aside.
               Grind together shredded coconut, chilli powder, turmeric powder, fennel seed powder and coriander powder along with the water and pulp of tamarind in a food processor. Set aside.
                In a nonstick skillet add the 3 Tbsp of oil and when the oil is hot add the sliced shallots.(You can use big red onions if you on't have any red shallots). Saute for a minute and add the green chillies and saute till the onions turn translucent. Now add the shrimp and saute for 1-2 minutes and add the ground coconut-tamarind  paste. Add salt. Mix the contents well and close with a lid. Allow the shrimp to cook in the closed pan in medium low heat for about 5-6 minutes. When a nice aroma comes out remove the lid and stir well again, careful not to smash the shrimp. Adjust the salt, spices and tamarind according to taste and allow to boil for 1 more minute. ( Add little water if necessary). Remove from the heat.


                 In another nonstick pan add the remaining 1 Tbsp of oil and when its heated splutter the mustard seeds, red chillies and curry leaves. When the spluttering subsides add the sliced shallots and saute till translucent. Add the whole sauteed mixture above the curry and close tight with the lid. Let it stand as such for about 20-30 minutes. When serving mix the contents well.

Spicy Prawn Curry

    Prawns or Shrimps are the most widely consumed sea foods in all parts of the world. It has a unique taste. Usually in Kerala most of the dishes are made of coconut...and same applies to prawns also. But here I tried to make a spicy prawn curry without using coconut.



INGREDIENTS
Shrimp / Prawn - 1 lb
Onion - 2 Big, chopped
Tomato - 2 Big, cubed
Ginger - 1" piece
Garlic - 4-5 cloves
Green chillies - 4-5, slit lengthwise
Turmeric powder - 1/4 tsp
Red chilli powder - 1 tsp
Kashmiri chilli powder - 1 tsp (Gives a deep red color to the curry)
Pepper powder - 1/2 tsp
Cardamom - 3-4, crushed
Cloves - 4-5, crushed
Cinnamon - 1" stick
Curry leaves - 1 twig
Cilantro - 1/2 bunch, chopped
Salt - As required
Oil - 2 Tbsp

METHOD
    Remove the shell, de-vein and wash the prawn thoroughly. Let it drain for 15 minutes. Marinate the shrimp with turmeric salt and a little chilli powder. Let it stand for another 15 minutes in the refrigerator. Crush the ginger-garlic together till they are mashed thoroughly. In a pan heat oil and saute the prawns till the raw smell is gone. Transfer into a plate and keep aside.
          Now add some more oil if needed and put in the cardamom, cloves, cinnamon and curry leaves. Saute the onions till translucent. Take care not to burn them. Now add the crushed ginger-garlic and the slit green chillies. Saute them nicely till an aroma comes and the whole mixture gets a nice brown texture. Now add the tomatoes and saute till they turn mushy and the oil starts separating . Put in all the spices and salt. You can adjust the spiciness as per your palate. put into it the fried prawns and stir well as to coat the entire prawn. Now add around 1/2- 1 cup water into this mixture. Be careful while adding water that the curry should not be too watery. When the curry starts boiling add the cilantro and remove from heat. This curry goes along well with plain rice, pulav, biriyani or chapati.

Roasted dry prawns

Prawns are good source of protein, yet are very low in fat and calories, making them a very healthy choice of food. Prawns do contain a lot of omega-3 fatty acids, but these fatty acids are good for you and help prevent against heart disease, circulatory diseases and many other types of illnesses. Prawns also contains high levels of vitamin B12, zinc, iodine, phosphorous, potassium, selenium and iron and have smaller quantities of calcium, magnesium and sodium. Dried prawns are also as good as fresh ones, but differ in their taste. You can use this recipe for any kind of dried fish.
                                     
INGREDIENTS

Prawns - 2 cups
Onion - 1 medium sized, chopped
Tomato - 1 medium sized, chopped
Garlic - 2 cloves, crushed
Chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Fish masala - 1 tsp
Mustard seeds - 1 tsp
Dried red chilli - 1 big
Oil - 2 Tbsp

   METHOD
          Clean the prawns. In a frying pan heat oil.When it is hot add mustard seeds & dried red chilli. Now saute the onion till it starts browning. Add the crushed garlic & tomato. When the tomato turns mushy add the spices and allow it to mix well. Now add the cleaned prawns and add salt (keep in mind that the prawns already have little salt). Now mix it till all the prawns get coated with the masala.Cover and simmer for 8-10 minutes, with ocassional stirring.

Dried Shrimp Curry ( Unakka konju curry)

  Seafood is an indispensable part of Kerala cuisine....Since Kerala is a coastal region plenty of  fresh fishes, prawns etc are available throughout the year.But still we have a palate for dried seafoods also.This is such a dish which makes use of dried shrimp (Unakka Konchu or Unakka Chemmeen) in a spicy gravy of coconut..

  INGREDIENTS
    Shrimp (Chemmeen) - 2 Cups
    Shallots (Kunjulli) - 3/4 Cups (sliced small)
    Tomato - 1 Medium size, chopped
    Red Chilli Powder - 1-2 tsp (depending upon your spice need)
    Green Chilli - 2 Slitted
   Turmeric powder - 1/4 tsp
   Raw Mango - 1/2 cut into small pieces(You can  also substitute 2tbsp amchoor powder)
   Fish masala - 1 tsp
   Grated coconut - 3/4 cup
   Cumin seeds - 1 tsp
   Ginger - 25 gm 
  Mustard seeds - 1 tsp
  Curry leaves - 1 stem
  Dried red chilli - 2 broken to pieces
  Oil & Salt as required 

     METHOD
            To clean the shrimp immerse it in water for 5-10 minutes.When it becomes soft remove the head, shell and clean the fish.This also helps in removing excess salt. 
                In a kadai (Most preferable is an earthen pot for the traditional taste) heat oil and add mustard seeds,red chillies & curry leaves.Put the sliced shallots and stir them till they starts golden in colour.Now add the tomatoes,green chillies and turmeric powder and stir till it becomes soft.Grind the coconut with cumin,red chilli powder & ginger into a smooth thick paste.When the tomatoes are soft add this paste with enough water to form a thick gravy. Now add the cleaned shrimps, raw mangoes (I used amchoor powder), fish masala & salt (Careful while adding salt as the dried fish itself has salt). Now cover it with a lid and allow to boil for 15-20 minutes. When done remove from heat.
