Vegetable Noodles

              Chinese food has become a part Indian cuisine. Among them the most popular one is Noodles. I love Noodles a lot. There are different kinds of noodles available in market like soup noodles, egg noodles, vermicelli, rice noodles etc. Its easy to fix and adored by kids. By adding variety of vegetables its healthy & nutritious too...


Egg noodles/Rice noodles - 2 blocks
Broccoli - 1/2 cup
Beans - 1/2 cup, cut diagonally
Cabbage - 1/2 cup, cut into thin strips
Red bell pepper - 1/2 cup, slices
Mushroom - 1/2 cup, sliced
Carrot - 1/2cup, cut into thin strips
  (You can add any vegetable of your choice)
Green chillies - 3-4 sliced
Ginger-Garlic paste - 1tsp
Tomato ketchup - 1/4 cup
Chilli garlic sauce - 1/4 cup
Soya sauce - 1 tsp
Hot & sweet sauce - 2 tsp
Bouillon cubes/Noodles masala - 1 pkt (you can use the masala pkt from Maggi or Top Ramen)
Pepper powder - 1/2 tsp
Oil - 1 tsp

    METHOD
        Boil the noodles with enough salt according to package instructions. Drain & keep aside.
        In a small bowl mix together the sauces, ketchup, ginger - garlic paste, masala & pepper powder. If you are using bouillon cubes mix it in 1-2 tsp hot water until it forms a paste and then add to the mixing bowl. Keep aside.
        In a large nonstick skillet heat oil in low flame. Saute all the vegetables with 1 tsp water and close with a lid for 2 minutes. The vegetables should not be over cooked, but should be tender and vibrant with color. Now add the sauce mixture and noodles. Stir all the ingredients till the mix is evenly coated throughout the noodles. Let it stand for 1-2 minutes before serving.
