Plantain chips is a common snack made in Kerala. For this raw plantains are used which is fried in fresh coconut oil. it is an accompaniment in Sadyas.

Only thing to be careful is when you are sprinkling more and more turmeric-salt water into the oil, the chips tends to become soggy and soft.(It happens after 3-4 batches) If that happens add more oil, let it heat thoroughly and then start frying. If you do not want to add water into oil you can put turmeric in the oil and sprinkle the chips with salt after draining them out from the oil, but when its still hot.
